It is a wine of striking delicacy and chromatic clarity. Through radical biodynamic viticulture and a very gentle infusion winemaking process, O'Callaghan extracts the most perfumed, mystical, and ethereal facet of Sangiovese, free from heavy woods and aggressive tannic extractions.
