Following careful délestage and a 48-hour static lees aging, the vibrant “lágima” must found its way to French oak tanks and couvé barrels, remaining “sur lie” for 11 months without batonnage – resulting in a truly refined character. The wine delivers a complex profile of orange peel, stone fruit – particularly almonds and walnuts – and a touch of dry black tea, underpinned by a distinctive mineral intensity reflecting its rocky origin.
