This Douro "Todão" – a rather shy beast, it seems – spent a cautious six hours macerating before its fermentation kicked off in stainless steel. It’s clear the winemakers went for a deliberately restrained approach, aiming for a fresh and elegant wine. Perfect with a *pequeno-alto* or some grilled fish, though perhaps lacking a truly surprising character.
