This “Todão” – a rather imposing name, I must say – hails straight from the heart of the Douro and leans towards a decidedly serious style. The grapes, harvested with impressive efficiency, benefit from a solid fermentation in stainless steel tanks, ensuring remarkable precision. A touch of French oak then refines the wine, delivering a beautifully balanced character and vibrant acidity – perfect alongside grilled fish or short-ribs.
