This Todao, hailing from the Douro, is a wine that’s clearly been taking a long nap – 48 hours of cool, slow decanting has given it a wonderfully vibrant acidity and a remarkably understated elegance. The careful, temperature-controlled fermentation (with weekly *bâttonage* for added richness) highlights the finesse of the Viosinho, Códega, and Rabigato grapes. It’s a wine that quietly observes, but on the palate, it unveils a surprising complexity – a fantastic match for grilled, fresh fish or a lighter bean stew.
