This Vallado Tres Melros is a curiously precise wine, it seems almost determined to be guided. With robotic assistance and stainless steel tanks, it’s a rather controlled fermentation. The brief aging in French oak adds a welcome layer of fruit and complexity, and it’s particularly well-suited to richer dishes like grilled beef or roasted kid – a delightful pairing to tame its lingering finish.
