The ripasso technique— a second fermentation over Amarone skins—imparts greater aromatic intensity, deep colour and a structured mouthfeel. It delivers aromas of ripe red fruit, subtle floral nuances and a hint of spice, with soft tannins and balanced finish, making it a superb companion for stews, roasts or semi‑cured cheeses.
