This Vidigal Bailado feels almost pulled from a tapestry, with the Syrah and Pinot Noir shaping wonderfully refined lines. The Touriga Nacional, as ever, provides a solid backbone. They’re remarkably quick to get to work with the grapes – no time for fuss! – and the fermentation, kept cool at 25°C, is extended with careful maceration. The addition of French oak lends it a wonderfully rich character; a perfect pairing with duck or wild mushrooms, naturally.
