Winemaking: Hand‑picked harvest, destemmed and crushed. Fermentation at controlled temperature, using very gentle crushing and pressing under an inert atmosphere. Prolonged fermentations partially in wood. Extended maturation in French oak with fining stirring until bottling. Minimum three‑month bottle ageing. Pairing suggestions: pairs well with aged sheep cheeses, savory roasted meats, grilled game alheira, and cod with eggs. Store lying down in a cool, dry place, away from light and temperature fluctuations. Serve chilled at 10 °C. Consume in moderation.
