This Alentejo rosé from Vinha D’Ervideira clearly had a spirited disagreement during the winemaking process. The careful separation of the grapes, coupled with the meticulous "vinymatic" technique – featuring rotating tanks – and a cool fermentation at 10-12°C, suggests the grapes weren't quite ready to cooperate. The result is a vibrant rosé with a wonderfully lively acidity and a pronounced red fruit character. It would pair beautifully with grilled fish or a classic polvo à lagareiro for a delightful clash of flavours.
