This “Vinho da Neve” – aptly named, given its origin in the Dão – is a beautifully understated tribute to tradition. The granite terroir, overlooking the Serra da Estrela, certainly hints at something special. Hand-harvested with careful selection of the grapes in the vineyard, it’s a process that clearly respects the land’s character. Fermented with indigenous yeasts and finished with a gentle foot-treading, it’s a wine that seems to carry the weight of time. A year in French oak and six months in cool cave aging delivers a notable elegance, and would pair wonderfully with grilled beef and a good, aged cheese.
