Château Gilette Sauternes Créme de Tête 1937 is produced following the original methods introduced in the 1930s by René Médeville, the grandfather of the current owner, Julie Gonet‑Médeville. The vineyards are cultivated ecologically (ploughing with organic enrichment). The grapes, affected by Botrytis cinerea (noble rot caused by the fungus “Botrytis cinerea”), thrive under the prevailing microclimate of Sauternes and Preignac. During harvest, between three and eight passes are required to pick the fruit that is perfectly “toasted” or in a state of noble rot.
