Château Gilette Sauternes Créme de Tête 1988 is produced following the original methods introduced in the 1930s by René Médeville, grandfather of the current owner, Julie Gonet‑Médeville. The vineyards are cultivated ecologically, using ploughing enriched with organic matter. The Botrytis cinerea (noble rot) on the grapes is favoured by the prevailing micro‑climate of Sauternes and Preignac. During harvest, between three and eight passes are required to collect grapes that are perfectly “roasted” or showing the full expression of noble rot.
