Freixo Designation Controlled Designation of Origin Alentejo SUB‑REGION: Redondo VINTAGE AND STAGE Touriga Nacional (40%), Cabernet Sauvignon (35%) and Alicante Bouschet (25%). The grapes of the different selected varieties are harvested at their ideal ripeness in 20 kg crates, and immediately vinified. After destemming, they are gravity‑fed to conical oak vats for fermentation. After pellicular maceration for extraction, the fermentation of the different varieties proceeds separately at moderate temperatures for about 10 days. A 12‑month period in new oak barrels imparts the wine a remarkable complexity and elegance. The batch is finished after the wood ageing, followed by a minimum of 24 months of bottle maturation. CONSUMPTION AND LONELINESS It pairs with traditional Portuguese meat and fish dishes, while also offering freshness and elegance ideal for pairings with fusion cuisine. A cellar wine with high ageing potential and great gastronomic suitability.
