MILLING AND STAGING Fermented in vats using the traditional full‑maceration method, with a blanket of cloth immersion and fermentation temperatures of 30 °C. Cold maceration for 48 hours. Delestage and re‑mashing with aeration. Partial aging (30%) in 225 L French and American oak barrels. TASTING NOTES Ideal with red meats, roasts, richly seasoned dishes, cheeses, and pâtés.
