M. Chapoutier Les Greffieux de M. Chapoutier is an Hermitage wine crafted from a single grape variety. The vineyard sits at the foot of the l’Hermitage hill, on a terrace of glacial alluvium. Its deep clay subsoil lends the wine refinement and aromatic richness, while rounded pebbles absorb heat, delivering concentration and structure. During vinification, grapes are harvested at peak ripeness and fully destemmed before being processed in concrete vats. Maceration is extended to gently extract tannins; only the run‑off must is used.
