Maçanita, located at the southern foot of Serra d’Ossa, is a truly special spot—take a seat! Two streams descend the mountain, bringing rainwater and keeping the soil cool even under the intense Alentejo heat, with the water table never dropping below 5 metres. The site, once called Chão dos Eremitas, boasts a rich history: “Chão” refers to a flat area, and “Eremitas” to the Hermit monks of the Order of São Paulo. Records show uninterrupted wine production since the 14th century, so significant that in 1397 a Papal Bull exempted the “Pauperes Eremitas” from taxes on their vineyards. Even further back, the discovery of a Phoenician wine amphora dated to the 8th century BC ties this territory to wine nearly 900 years before the Romans. Winemaking: grapes are planted on granite soils under a certified integrated pest‑management regime and strictly selected on a choice table. Fermentation uses 30 % whole clusters and 70 % destemmed fruit, falling by gravity into the tank. A spontaneous fermentation follows, then 40 days of skin maceration, before a 12‑month aging period in stainless‑steel tanks.
