Pai Horácio Concept: A selection of the finest varietal wines from each vintage, created to honour the company’s founder. Vineyard altitude: 160–650 m. Soil: Slate and Slate/Granite. Vinification: Total destemming, crushing and pressing under an inert atmosphere to preserve the grapes’ full aromatic potential. The entire wine ferments in French oak barrels for six months, with fine lees stirring (bâtonnage) until the final blend is ready. Serving: Serve at 10 °C; it reaches its full expression after about 15 minutes, when the temperature rises slightly and the wine oxygenates. It’s ideal with delicate fish and shellfish dishes, and also pairs well with poultry and rabbit.
