Quinta do Pôpa wines are distinguished by balance, provided by a vibrant freshness and acidity, fruit aromas and floral notes, yet also body and structure imparted by the wood ageing. They are meant to be enjoyed at the table with comfort food. Grape provenance: Cima e Baixo Corgo. Altitude: 50 to 550 metres. Soil geology: Xistoso. Vine age: over 25 years. Vinification: 20 % Verdelho, 20 % Cerceal, 20 % Folgasão, 15 % Viosinho, 15 % Gouveio, 10 % Rabigato. Grapes are received in 20‑kg boxes, then fully destemmed and gently crushed. The must is pressed to separate liquid from solids. Cold decantation lasts 24–48 h. Fifty per cent of fermentation occurs in temperature‑controlled stainless‑steel vats, the other fifty in French oak barrels on fine lees for 9–10 months. Technical data: Total acidity – 4.8 g L⁻¹ | Volatile acidity – 0.4 g L⁻¹ | pH – 3.47 | Total sugars < 2 g L⁻¹.
