The Snow Vineyard tells the story of a place called Barcas in Oliveira do Conde, where the boatman crossed the Mondego, completing the link between the cities of Viseu and Bobadela. According to several researchers, this stretch would have passed through what is now the municipality of Carregal do Sal. And here are the stones, some of them shaped like aduelas, proving that this is ancient ground traversed by a Sacred River that once belonged to a noble estate and later was bought by a priest. Harvested by hand, the grapes come from a single one‑hectare plot near the Serra da Estrela. The winemaking involves total de‑picking, prolonged maceration in a small granite mill, and controlled alcoholic fermentation with indigenous yeast over 20 days. The wine is then decanted and transferred to new 225‑litre French oak barrels, where it ages for 12 months, followed by six months in the bottle before release. It is a red DOC Dão wine from the closest vineyard to the Serra da Estrela, the last to be harvested due to its late ripening. The soils are granite‑origin with large rocky outcrops, at an altitude of 400–600 m, influenced by the Dão and Mondego rivers. Summers are hot and dry, winters are cold.
