South Australia's Barossa Valley is the iconic home of Old Vine Shiraz — some plantings dating to the 1840s, predating the European phylloxera crisis, survive untouched. The warm, dry continental climate produces opulent, full-bodied Shiraz with deep colour, intense ripe fruit, and the characteristic chocolate-and-pepper signature. Penfolds Grange, made primarily from Barossa Shiraz, is the flagship. Mataro (Mourvèdre), Grenache and Cabernet Sauvignon complete the red palette; Riesling from the higher-altitude Eden Valley sub-region is among Australia's most age-worthy.
