About this grape variety

Pedro Ximénez (PX) is the white grape used to make the lusciously sweet, intensely dark version of Sherry in Jerez, plus similarly sweet Montilla-Moriles wines further north. The grapes are sun-dried on straw mats to concentrate sugars; the resulting wine is one of the world's most extreme expressions of sweetness — like liquid raisins and figs poured over the palate. Aged for decades in solera. PX is also used in tiny percentages to sweeten some sherries.
