This “Abafado Molecular” from Luis Pato, hailing from the Bairrada, certainly appears to have undergone a rather… intense experiment. The blend of Bical and Cerceal delivers a white wine with acidity that almost defies gravity – a true reflection of the vibrant and audacious character of the Bairrada. Expect a burst of white fruit and lovage, finishing with a persistence that demands a second glass. Seriously, it’s fantastic with grilled fish and a healthy dose of mischief!
