Adega Mayor Harvest Between August and September Production 3,400 bottles of 75 cL Oenology Rui Reguinga and Carlos Rodrigues Vinification After a manual harvest and a rigorous selection of bunches, the destemmed grapes were allocated to three types of fermenters: a portion fermented in stainless‑steel tanks, another in a used oak barrel, and the last in a clay amphora. The fermentation of this wine was as natural as possible, following a strategy of minimal intervention and without adding any enological products.
