This Arrois Les Graviers Chardonnay is, quite frankly, a revelation. Crafted with an almost monastic dedication to biodynamic practices and utilizing yeast strains that clearly had a rather intense discussion beforehand, it delivers a wonderfully chalky and limestone-driven character. The subtle influence of new oak (used judiciously, just a third of the total) complements the silky, goose-feather-smooth texture. Produced in a remarkably restrained 6200 bottles, this wine speaks of a producer who values minimalism – and, presumably, exceptional cellar management. Ideal with oysters or grilled white fish for a delightfully rebellious pairing.
