And the stainless steel fermentation, with the lees dancing ceaselessly, ensures the characteristic aromas of Alvarinho and Doncastelo remain wonderfully vibrant. It seems the recipe is elegantly simple: freshness, precision, and a knack for pairing beautifully with grilled fish and salmon – a combination that, frankly, feels utterly divine.
