Soalheiro Soalheiro Espumante Bruto Nature is a sparkling wine that goes "outside the box," inspired by the ancestral method of sparkling wine production and featuring a special contribution of innovation. The Espumante Bruto Nature is a wine suited to a variety of occasions. It can be enjoyed on its own at the end of the day, its intensity of flavour providing a pleasantly relaxing sensation. It is also an excellent accompaniment to strong cheeses, rich cuisine, red meat dishes, feijoada, or grilled vegetables. The Alvarinho grapes that give rise to this wine come from the Soalheiro vineyards, located in the Monção and Melgaço region. They are sheltered by a chain of mountains that creates a unique microclimate, where rainfall, temperature, and hours of sunshine are ideal for the proper ripening of the grapes, allowing a strong expression of the characteristics of this grape variety. The soils are granitic, and the vineyards are certified organic, which means the base wine has no added sulphites. Winemaking: The base of Soalheiro Espumante Bruto Nature is Soalheiro Nature. The must is fermented in stainless steel and then undergoes a complete malolactic fermentation. The wine is bottled with Yeast Pearls, a product resulting from Portuguese research, which innovatively trigger the start of the secondary fermentation in the bottle. As a result, this wine is not subjected to disgorgement after secondary fermentation, and the bottle is therefore sealed with a special stopper. Aged in the cellar for 18 months.
