This Cabeça d’Velho clearly had a very attentive youth – full destemming, chilled at 12°C, and decanted. It’s a deliberate approach hinting at a producer wanting to coax the very best from their Encruzado and Bical grapes. The controlled fermentation ensures that the vibrant acidity and tropical notes, alongside floral and citrus nuances, remain wonderfully preserved. A truly refreshing wine, perhaps best enjoyed with a summery pineapple salad.
