This "Cara a Cara" certainly seems to have had a rather rebellious youth – a deliberately delayed fermentation with a decidedly bohemian approach. The blend of Touriga Nacional, Aragonez, and Touriga Franca, presumably enjoyed a sheltered upbringing, but the result is a wine with remarkable longevity. Minimal pump-overs and a prolonged maceration, extending until the end of November, hint at a stubborn refusal to rush. It’s a wine that clearly prefers a slow, deliberate maturation – perfectly suited alongside a hearty red meat dish or a slow-cooked roast, perhaps with a hint of pepper.
