This Carillon D’Angelus feels like it’s stepped straight out of a sci-fi film. The winemaking – with its inverted conical tanks and gravity extraction – certainly suggests a rather alchemic approach. The Merlot and Cabernet Sauvignon are clearly locked in a high-tension collaboration, and the resulting full-bodied wine promises the characteristic intensity you’d expect from the Bordeaux region. It would pair wonderfully with a hearty beef roast, or perhaps a perfectly grilled ribeye with a rich red wine reduction.
