Right then, let’s have a look at this Ekam Essència… It seems these monks of the Order of St. John – bless their medieval tank-building skills – were rather serious about their Alvarinho and Riesling. This wine, produced by Castell d’Encús since 2002, clearly aims to recapture those vibrant, sharply acidic results. Apparently, a touch of modern spirit is thrown in for good measure, and it’s said to pair wonderfully with seafood – a bit of a rebellious choice, wouldn’t you say?
