This Colônias do Douro Superior is a wonderfully revitalised white – a true reflection of the Douro’s dedication. Following a 48-hour “nightly statement” at just 8°C, the must was patiently transformed, retaining its freshness through batonnage in tank – a technique that undeniably added volume and a particularly distinctive personality. With Viosinho and Rabigato contributing, and planted on the tireless north-facing slopes at 500 metres, this wine delivers an explosion of aromas and a vibrant acidity; it’s a fantastic match for grilled fish or roasted chicken, really.
