This Chrono Dão, a Jaen born in a Dão subregion flirting with a Mediterranean climate, is a truly special bottling of just 574 bottles. Produced with minimal intervention, it beautifully reflects the granite terroir and mountain influence – a sentiment even Edgardo Pacheco couldn't dispute (95/100!). The gentle foot treading, carbonic maceration, and 10 months in medium-high toasted French oak contribute to a wine of remarkable elegance and complexity. Seriously, this would pair brilliantly with a hearty stew or a selection of local cheeses and cured meats – a wine to be savoured, certainly, but one that might just pleasantly surprise you.
