This Dominó Rosé, born from 30-year-old Castelão vines nestled in the Ribeira de Caparide, is the wonderfully obsessive creation of Vítor Claro – a former chef who, as he puts it, demanded vinification with more precision than a perfectly executed dish. The result is a remarkably bold wine, clearly channeling the rugged beauty of the Portalegre mountains. Bottled unfiltered and only after each winter, it captures the very spirit of the Serra de São Mamede, and would pair beautifully with grilled fish or fresh oysters.
