**Winemaking** The grapes, sourced from selected plots at our Ervamoira Estate and the Bons Ares Estate, were hand‑picked and separated into small boxes. The Ervamoira grapes were vinified in granite vats, while the Bons Ares grapes were fermented in wooden and concrete tanks, with a long maceration period. Malolactic fermentation took place in 6,000‑ and 10,000‑liter tanks. The wine was aged for 16 months in new first‑ and second‑year barrels. It was bottled in May 2017. **Food Pairings** Pairs beautifully with roasted meats, red meats, and even fish such as oven‑baked cod. It also shines alongside aged sheep‑milk cheeses. **Storage & Service** Store horizontally in a cool, dry place, protected from light and temperature fluctuations. Serve at 16–18 °C.
