Edouard Delaunay Denomination: AOP Chablis Premier Cru Fourchaume Terroir Our Fourchaume is produced from grapes cultivated on the coolest parcels of this terroir, with west‑southwest exposure. The soil consists of deep Kimmeridgian clay‑limestone marl, with brown clays and low pebble content, giving the ground excellent water reserves and good drainage. The Premier Cru Fourchaume is the emblematic of Chablis Premier Crus, with a large planted area (140 ha), producing generous, mineral, seductive and complex wines. Vinification and Aging The grapes are harvested at the peak of ripeness. The must, carefully clarified, is transferred to stainless‑steel tanks and 20 % oak barrels for a high‑precision fermentation. The wine remains in contact with fine lees for 12 months, with frequent tastings to decide operations such as batonnage or racking. The blending is performed with maximum precision to guarantee optimum balance in the final wine.
