Evidência White Wine Evidência Harvest White is born in the Dão, a region celebrated for its white wines that are distinguished by balanced acidity and exceptional longevity. Surrounded by several mountains—including Serra da Estrela, the country’s highest peak—the Dão features predominantly granite soils with some slate areas. Its temperate, Mediterranean‑continental climate is shielded from maritime influence by the mountains, and the altitude (75% of the area lies between 400 and 700 m) imparts excellent acidic freshness to its wines. The two main rivers, the Dão and the Mondego, along with the topography of their valleys, give rise to a wide variety of microclimates. This vintage is a batch wine made from Encruzado, Malvasia Fina and Bical—three hallmark Dão varieties. It is fermented in stainless‑steel tanks. The elegant white wine pairs beautifully with grilled fish such as sea bass or seabream, seasoned with fresh herbs and lemon. Its balanced acidity and fresh flavours enhance the fish, while floral and fruity notes complement the dish’s lightness and crispness.
