The “Carcavelos” is composed of the following varieties: Arinto, Galego Dourado, and Ratinho, and shows a honey colour. It demonstrates extremely high quality standards and joins “Porto”, “Madeira”, and “Moscatel de Setúbal” in the exclusive group of Portuguese fortified wines, regarded by numerous oenologists as one of the best Portuguese aperitifs and an excellent digestif. Harvest is manual. Fermentation involves adding 77% fortified wine spirit (from the Lourinhã region) halfway through the fermentation process.
