Vinification: The grapes were destemmed and gently crushed, with the solids transferred to stainless‑steel fermentation tanks by gravity, under automatically controlled temperature and pumping. Fermentation lasted about five days, during which the wine was subjected to a series of punch‑downs to softly draw aromas and phenolic compounds from the skins into the must. Afterward, it was moved to aging tanks, and the solids were pressed in pneumatic presses to delicately extract the wine they contain. Following malolactic fermentation, the wine is aged in stainless‑steel tanks until bottling, which is carried out in stages to preserve the blend’s freshness. It is then aged in bottle for variable periods before being sold.
