Herdade das Servas Viticulture: Vineyards planted on red soils derived from brown or crystalline limestones, with slate spots, benefiting from a Mediterranean climate with high thermal amplitudes and hot, dry summers. After necessary green interventions during the vegetative cycle, the grapes were hand‑picked and transported to the cellar in crates. Vinification: The grapes are selected, destemmed, followed by pre‑fermentative maceration. Fermentation takes place in oak barrels and stainless steel tanks with temperature control. Maturation: The wine is fermented in French oak barrels and undergoes a partial 12‑month ageing in clay amphorae. After bottling, it rests in our cellar. To preserve all its qualities, it was not stabilised, allowing natural sedimentation. Longevity: Up to 20 years if stored in a cool, dark place with the bottle lying down. Pairing: Goes well with roasted fish, bivalves à bulhão pato, cheeses and sausages. Decanting is recommended. Enology: Luís Serrano Mira and Ricardo Constantino.
