Herdade das Servas Viticulture: Vines are planted in red soils derived from brown or crystalline limestone, with slate patches, benefiting from a Mediterranean climate with high thermal amplitudes and hot, dry summers. After necessary green interventions during the vegetative cycle, the grapes were hand‑harvested and transported to the cellar in boxes. Vinification: The grapes are selected, destemmed, followed by pre‑fermentative maceration. Fermentation takes place in wooden vats and stainless steel tanks with temperature control. Stage: Wine fermented in French oak barrels and partially aged for 12 months in clay amphorae. After bottling, it rested in bottles in our cellar. To preserve all its qualities, it was not stabilised, allowing natural sediment formation. Longevity: Up to 20 years, if stored in a cool, dark place with the bottle lying down. Pairs well with oven‑roasted fish, bivalves à bulhão pato, cheeses and cured meats. Decanting is recommended. Enology: Luís Serrano Mira and Ricardo Constantino.
