This De Bacchus from Herdade das Servas has clearly taken a rather… deliberate approach to maturation. Following a careful hand harvest and selection, the grapes underwent a 48-hour “foot treading” in a marble press – a process that’s clearly part of the ritual. Fermented in new French oak acorns, followed by a period of tanning, resulting in an unexpectedly complex wine. Now aged for two years in French oak acorns, it promises a remarkably intense experience. Perfect paired with grilled beef or dishes featuring wild mushrooms.
