The meticulous approach – extended maceration, lagar and inox fermentation, even automated ‘pisa’ – culminates in a lengthy 18-month aging in French and American oak barrels. The result? A deeply purple wine brimming with notes of plum, fig, dark chocolate and a touch of spice; certainly not a whisper of finesse.
