Fermentation and aging in concrete vats—thanks to their porosity and neutral aroma—enhance the fruit's freshness and purity, resulting in a direct, fresh, and vibrant wine. Viticulture: Production method: Certified organic vineyard. Soil geology: Granitic nature with a transition to xystic, friable-clay structure. Average vine age: 16 years. Vinification / Maturation: Grape destemming and crushing. Alcoholic fermentation in concrete and stainless steel tanks, with gentle extraction. Malolactic fermentation in concrete vats.
