This Imperfect seems to have had a minor mishap in the vineyard – hand-picked in 25kg crates, with a meticulous selection table, and a delicate separation of pulp and seeds. The must, split between stainless steel and used Burgundy barrels (Puligny Montrachet, naturally), clearly demonstrates a certain reverence for tradition. The fermentation in a 1962 concrete tank promises minerality and rustic character – a touch that, frankly, isn't entirely unwelcome. A bold gamble for a wine that, despite being fresh and balanced, has the potential to age gracefully – and perhaps, delightfully, surprise some more discerning palates. Perfect with white fish or seafood.
