The Periquita Superyor red wine is made primarily from the Castelão grape and aged for 10 months in new French oak barrels. It displays a deep ruby color and an elegant aroma, where the wood notes harmonise with subtle sweet licorice undertones. On the palate it reveals black fruit, forest nuances, and licorice, supported by very elegant and well-integrated tannins, culminating in a long, distinctive finish. A family business with almost two centuries of history that, without ever resting on past achievements, has known how to modernise. José Maria da Fonseca has been engaged in winemaking since 1834, the result of a family passion that has managed to preserve and project the memory and prestige of its founder. Aware of the responsibility of being today the oldest table‑wine and Moscatel de Setúbal producer in Portugal, José Maria da Fonseca follows a philosophy of continual development, which leads it to invest increasingly in research and production support, combining the latest techniques with traditional knowledge. A prime example is the Adega José de Sousa Rosado Fernandes in Reguengos de Monsaraz, Alentejo, where the Roman tradition of fermenting in clay pots is kept in step with the latest technology.
