This Joseph Drouhin Mâcon-Bussières Les Clos is a masterclass in restraint – it’s remarkably special precisely because it does so little. The pressing is handled with a near-religious reverence, avoiding any excessive fruit character. The aging – half in 500-litre oak barrels, the other half in inox – is a meticulous six to eight month process, resulting in an astounding equilibrium. The palate reveals delicate mineral notes intertwined with white flower nuances, and the finish is so persistent it practically begs for another sip. You can truly hear the terroir whispering here, and Drouhin’s approach feels almost… hands-off. Absolutely divine with oysters, naturally.
