Kelman wines are produced with minimal intervention, preserving the authenticity of their noble origin. Integrated production practices are adopted, following sustainable agriculture, rational use of resources, and the preservation of ecosystems. The vineyards featuring native Dão varieties are all suitable. Six hectares were planted in 2000, and just under two hectares consist of old vines, with some plots planted in 1931. Production is entirely without irrigation, with hand‑harvested grapes, respecting the optimal ripening point of each variety. No animal‑derived vinification products are used, making the wines suitable for vegan consumers. Kelman wines offer a wide gastronomic range, with great elegance and the ability to evolve for decades in the bottle. They are highly prized by restaurants worldwide, with markets in the United Kingdom, United States, Germany, Netherlands, Sweden, Canada and Brazil. SUGGESTIONS: Pair this wine with shellfish, elaborate fish dishes, or light meats and more seasoned white meats. It also complements buttery or dry cheeses such as Flamingo. Serve at 10–12 °C in a large glass if possible.
