This Monte Cascas, born from the limestone soils of Bairrada, is a testament to the virtues of patience and a gentle hand. Hand-picked in September and meticulously vinified – with 30% undergoing délestage and a cold maceration – it showcases the best of Bical, Baga, and Fernão Pires. A generous 24 months aging in new French oak has added layers of complexity and smoothness. Seriously, it’s begging for a perfectly cooked Iberian ham or a robust Serra da Estrela cheese, or perhaps to really elevate a traditional Bairrada game stew.
