“This Monte Cascas Reserva certainly seems to have been made with a healthy dose of defiance – wild-fermented and crushed with considerable force, as if the Alentejo itself was urging a bit of boldness. Those three days of cold maceration clearly signal an ambition to hold onto those vibrant fruit aromas. The fermentation, kept warm at 24°C, aimed for a lovely balance between power and finesse. And the ageing in French oak barrels, a mix of different ages, is promising a welcome complexity, ideally suited to pairing with roasted pork – a classic combination that will revel in the wine’s ripe fruit and subtle spice notes.”
